Chef Andreu Segura - For the Love of the Land and Seas

Andreu Segura champions the fusion of organic and culinary excellence at the helm of Mallorca's 365 Restaurant, sitting in the comforts of the luxury eco-hotel Son Brull. A rural sanctuary dating back to the 18th century, holistic agriculture was also a part of the former Jesuit monastery's history. Located in Pollensa overlooking the Tramuntana Mountains, 365 Restaurant is wrapped by olive groves, citrus trees, house vineyards and an organic farm. Chef Segura has a garden of salt & turf right on his rural doorstep - from the mountains, the lush valley and the pick of the daily catch from the Mediterranean waters. No wonder he is a happy chef. 

Mallorca is his homeland, which frankly defines his delicate-rural culinary talent, adopting age-old Mallorquin flavours tracing the island's rich epicurean history and inventing delicious variants. A food heritage that includes Roman, African and aromatic Arabian influences and uses its tropical fruits for sweetness and acidity. He has an innate familiarity with the ingredients and gained experience at some of Mallorca's Michelin starred restaurants. 

Harvesting as much produce as possible for the hotel's 40-acre certified organic farm, the two tasting menus of Restaurant 365 are equally adventurous. One being solely vegetarian with a 'taste from the estate' theme serving up Cauliflower with Hazelnut and Truffle, or a Risotto with Black Chanterelles. The classic tasting menu plates 'Chickpeas Cigró Mallorqui' - served with a free-range egg and peppermint, or a Guinea fowl Cannelloni with a Fig Béchamel, Butifarrón with Apple on Xeixa Blinis and Suckling Pig with roasted garlic and Laurel Potato. He also oversees the casual daytime and easy go garden menu - where must-have island tapas are suitably given the 'Segura' touch.

Organic, tasty, original and edgy with a photogenic beauty is what distinguishes Andreu Segura's kitchen soul, a young enthusiast for good honest food made from the best ingredients, sourced from the nicest people who care about their island's environment. Eat well, feel well.
