Chef Simon Petutschinig – A Master of Fusions

Chef Simon Petutschinig at the fine-dining venue Fera Palma, is an insanely popular restaurant that celebrates Spanish cuisine with plays on traditional tapas and Mediterranean cuisine mixed up with fresh Japanese fusion and flavour.

Behind this interesting concept termed ‘Borderless Mediterranean’ is Austrian chef Simon Petutschinig, who is well acquainted with innovative Spanish cuisine, having worked in a two-Michelin-starred restaurant, Miramar. He’s no stranger to Mallorca either: Simon was the founder chef at Quadrant restaurant at urban clubhouse hotel Sant Francesc, where he delivered original plates that flew from the kitchen to perpetually full dining tables. 

Now at Fera Palma, diners can expect more of his accomplished high-concept dining and distinct culinary vision. Attracting a crowd of refined Mallorcans and global tastemakers, visitors to Fera Palma will be wowed by light Asian flavours such as ginger, nori and yuzu which mould seamlessly into traditional Mediterranean ingredients.

The best way to experience Fera’s food is to take a foodie journey through one of three tasting menus. Courses include wagyu steak tartar with nori, olive and truffle; oyster and caviar, plankton and yuzu; and foie gras served with ponzu and pear. Dishes come presented like works of art - diners will be in no doubt of the sheer artistic expertise of the chef. Adding to the gastronomic delight is a selection of unique sake cocktails and a wine list made up of some 60 varieties – although the smooth organic Mallorcan red is recommended.

Even better, the design and interiors at Fera have been considered to heighten the senses further. Firstly, Fera’s hideaway location down a Medieval alley gives an impression of mystery and intrigue. Ducking through an arched entrance, diners are welcomed to an atmospheric mansion house courtyard, shimmering with oversized greenery in pot plants. Pre-prandial drinks can be taken at the old stone arched bar, softly lit by an elaborate Balinese chandelier and in the minimalist dining room, earthy tones complement modern art installations and sculptures which sit happily within the old-world charm of this historic building.
